Y'know what I like about the grocery store after the New Year's festivities have subsided? The discounts in the produce aisle. Our supermarket presently abounds with veggie platters on markdown. Most of the prep work's been done already, and when the price is right, I'll usually snatch up one or two. Besides the obvious noshing applications, I think vegetable trays are great to get a super-fast and easy stir fry going. From a particular crudite tray featuring broccoli and bell peppers, I was able to throw together this spicy beef stir fry with the help of some thinly sliced leftover ribeye, a few spoons of soy sauce, a squirt of Sriracha , and a tablespoon of crunchy peanut butter.
